Instant Pot Pumpkin Spice Oatmeal

The Instant Pot makes it easy to make warm, tasty pumpkin spice oatmeal. The healthy steel-cut oats in this recipe are mixed with the rich flavor of pumpkin and warming spices to make a cozy breakfast or brunch.

Ingredients:

  • 1 cup steel-cut oats

  • 2 1/2 cups water

  • 1 cup canned pumpkin puree

  • 1/2 cup milk dairy or plant-based

  • 1/4 cup maple syrup

  • 1 teaspoon vanilla extract

  • 1 teaspoon pumpkin spice blend

  • 1/4 teaspoon salt

  • 1/2 cup chopped nuts optional, for topping

  • Maple syrup and additional milk for serving

Instructions:

Combine steel-cut oats, water, pumpkin puree, milk, maple syrup, vanilla extract, pumpkin spice blend, and salt in the Instant Pot


Secure the lid and set the Instant Pot to Manual/Pressure Cook for 4 minutes on high pressure


Once the cooking cycle is complete, allow natural pressure release for 10 minutes, then carefully release any remaining pressure manually


Open the lid and stir the oatmeal


Let it sit for a couple of minutes to thicken


Serve the pumpkin spice oatmeal in bowls, topped with chopped nuts if desired


Drizzle with additional maple syrup and milk
